Fytia is a unique part of PDO Naoussa that yields the most elegant expression of Xinomavro in the region. The high altitude (400 - 650 metres) compared to the rest of the appellation makes the biggest difference in this area. The roots tend to reach deep to find water and other important elements in the light soils, consisting of schist and granite. The temperatures here are low with a constant circulation of air from Mount Vermio. In addition, the big diurnal range postpones the harvest to the beginning of October while retaining acidity and freshness into the grapes.
